Of Champenoise origin for three generations and very attached to the traditions of this region, Domaine Rosier plants 35 hectares of AOC grapevines situated at the Villelongue d'Aude. In 1531, the monks of the Benedictine abbey of Saint-Hilaire, close to Limoux, produced in their cellars an unusual white wine which naturally takes foam in its bottle of cork stopped glass tracing back to Limoux the origins of the first effervescent wines in the world. Rosier wines are made using blends of Chardonnay, Mauzac, Chenin and Pinot grapes. The vineyard that constitutes the major part of their provision in grapes is cultivated without the use of any chemical fertilizers, a process that continues to ensure a juice of the highest quality, evident in the most recent award for the Chateau de Villelongue Cremant achieving the gold medal in the Paris "Concours Général Agricole" March 2007.
